Detox rainbow salad with cottage cheese

(serves 2)

½ cup chopped cucumber

½ cup diced beetroot

½ cup shredded red cabbage

¼ cup chopped red onion

1 cup chopped iceberg lettuce

½ cup chopped capsicum

½ avocado, sliced

10 cherry tomatoes, halved

½ cup chickpeas (from a can is fine)

4 tablespoons cottage cheese

⅓ cup chopped fresh coriander

Dressing

½ cup Greek yoghurt

juice of 1 lemon

1 teaspoon Dijon mustard

1 teaspoon raw honey

1 tablespoon olive oil

salt and pepper

Method

1. Assemble the chopped salad ingredients into two salad bowls. Add 2 tablespoons cottage cheese to each bowl.

2. Add the dressing ingredients to a bowl or jar and mix well. Season to taste.

3. Drizzle the dressing evenly over the salads and sprinkle with coriander.

Prawn salad and miso dressing

(serves 2)

Ingredients

12 cooked king prawns

½ cup fresh baby spinach

½ cup chopped kale

½ cup chopped broccoli

1 carrot, grated

1 cucumber, chopped

½ cup chopped yellow squash

½ cup corn kernels

1 tablespoon sunflower seeds, to garnish

1 tablespoon pepitas, to garnish

Miso tahini dressing

2 tablespoons tahini

2 teaspoons white miso paste

1 teaspoon tamari

1 tablespoon apple cider vinegar

1 clove garlic, minced

salt and pepper

2 teaspoons maple syrup

¼ cup water

Method

1. Assemble all the salad ingredients on two plates.

2. To make the dressing, combine all the ingredients in a jar and shake to combine.

3. Drizzle the dressing evenly over both salads and top with pepitas and sunflower seeds.

Detox salad in leaf bowls

(serves 2)

Ingredients

1/2 red cabbage

2 carrots

1 beetroot

1/4 cup mixed nuts, of your choice

1/2 avocado, sliced

1/4 cup of fresh parsley and dill chopped

Dressing

2 cloves garlic

1 tablespoon olive oil

2 tablespoons apple cider vinegar

¼ cup olive oil

salt and pepper

1 teaspoon maple syrup

Method

1. Remove the outer cabbage leaves to make two bowls.

2. Cut the cabbage in 1/2. Keep some for another recipe and shred the other half of the cabbage, carrots with a knife, mandolin slicer or cheese grater. Chop the nuts.

3. To make the dressing, combine all the ingredients in a jar and shake to combine.

4. Add some vegetable mix to each cabbage leaf. Top with nuts and the dressing.

Finally, add slices of avocado and the mixed herbs to each salad. Season to taste.

Kickstart detox curry

(serves 2)

Ingredients

1 tablespoons sesame oil

1 teaspoon cumin

1 teaspoon turmeric

4 cloves garlic, chopped

1 tablespoon grated fresh ginger

chilli (cayenne or birdseye), to taste

1/2 brown onion, diced

salt and pepper

2 tablespoons tomato paste

1/2 cup diced pumpkin

1 parsnip, chopped

2 cups of vegetables stock

1/2 cup cooked chickpeas

1 cup chopped cauliflower

1 bunch fresh coriander, chopped

Greek yoghurt, to serve

Method

1. In a large pot over medium heat, add the oil, cumin, turmeric, garlic, ginger and chilli. Stir well. Add the onion and salt and pepper to taste, then cook until transparent.

2. Add the tomato paste, pumpkin, parsnip and vegetable stock. Bring to the boil then reduce to a simmer. Cook for about 10–15 minutes, or until the vegetables are cooked through. Add the chickpeas and cauliflower and cook for another 6 minutes. Add half a bunch of coriander and stir through.

3. Serve with a dollop of Greek yoghurt and the remaining coriander.
